Using Bijou Noir grown by the farmer, Mr. Shigeharu Wagatsuma. Bijou Noir is one of Japanese original grape varieties, crossing from Koshu, Merlot, and Malbec. Rich colors with high phenol and tannin. Plum, black pepper, and spicy aromas. Fuller body, but lower acidity.
