Crafted with Omachi rice. This expression showcases a fuller-bodied style within the Minami range. A limited Junmai Ginjo made from premium Okayama-grown Omachi. Although classified as Junmai Ginjo, it is brewed to Junmai Daiginjo standard 50% polishing. Fermented slowly at low temperatures and matured gently. Refined, rounded umami with subtle ginjo aromatics. The palate opens with a soft, graceful attack, gradually expanding into a plush, enveloping texture. Dry in style, with a clean and crisp finish that is signature of Minami style.

About Minami

The brewery was established in 1869, but the Minami brand only launched in 1998. They are one of the smallest sake breweries in Japan, that's why they are particular about brewing sake with precise control of temperature and water content in the rice. Their target quality of sake is that consumers can enjoy sake itself even without pairing foods.
