Based on the standard Ibuki, the Junmai Ginjo is matured for six months to achieve additional softness, depth and refinement. Gentle aromas of white peach, melon and fresh pear lead to a smooth, elegant palate where rice-derived umami and subtle sweetness are balanced by refreshing acidity and a pleasant, refined bitterness. The ageing brings greater harmony and a rounded texture, followed by a clean, lingering finish.
The label colour represents the forests around the brewery transitioning from summer to autumn, reflecting the sake’s evolving, mellow and layered character.
