A unique 99% koji sake showing a complex yet refreshing aromatic profile. Gentle Ginjo aromas are layered with yuzu, sudachi(Japanese lime), lemongrass and subtle yogurt-like notes. On the palate, distinctive koji-derived sweetness and umami are balanced by refreshing acidity and a pleasant bitterness, reminiscent of a craft sake brewed with citrus or hops.
Light and crisp in texture, it finishes dry, clean and relatively short, while retaining the signature balance and refinement of Ibuki. Best served well chilled to highlight its vibrant, refreshing character.
