Producer's 1st single vineyard wine from Moutre.
Moutere clay soils, scientifically known as Ultic clay derived 100% from the mineral quartz.
Elegant and restrained, opening with citrus (lemon zest, grapefruit) and subtle green apple. With air, develops white peach, light floral tones, and a delicate nutty / lees-derived complexity. Fine texture and creaminess from lees and full malolactic fermentation, balanced by freshness.
Gentle whole bunch pressing. Settled overnight then transferred to French oak and stainless for wild fermentation. No temperature control. 100% MLF. 16 months on lees in a combination of French oak and stainless steel. Coarse filtration prior to bottling.
