Growing up in Scotland, Chef Seumas was surrounded by nature and the rhythm of the sea. Fish was a daily staple, and he often spent his childhood fishing with his grandfather, then returning home to meals lovingly prepared by his grandparents. They grew their own vegetables, raised cattle, and made everything from scratch — giving him the freedom to explore, discover flavors, and build a deep respect for ingredients. His philosophy remains rooted in those early days: “Respect good ingredients, and let them shine.”
Now, with 16 years in the industry, his life continues to revolve around food and people. He travels to new places in search of fresh inspiration and unique ingredients, all while nurturing a team whose growth and well-being he cares for deeply.
