What led you to the chef’s path?

Growing up in Scotland, Chef Seumas was surrounded by nature and the rhythm of the sea. Fish was a daily staple, and he often spent his childhood fishing with his grandfather, then returning home to meals lovingly prepared by his grandparents. They grew their own vegetables, raised cattle, and made everything from scratch — giving him the freedom to explore, discover flavors, and build a deep respect for ingredients. His philosophy remains rooted in those early days: “Respect good ingredients, and let them shine.

Now, with 16 years in the industry, his life continues to revolve around food and people. He travels to new places in search of fresh inspiration and unique ingredients, all while nurturing a team whose growth and well-being he cares for deeply.

What I really appreciate about Apanage 1874 is its light, crisp, and generous character. It has depth yet remains wonderfully inviting. That’s what guided the dish — delicate layers full of flavour, presented in a way that feels bright and celebratory. By incorporating the Champagne directly into the velouté, the pairing becomes seamless — as if the dish and the glass are speaking the same language.

The toasted brioche notes of Apanage 1874 played a key role in the concept. I wanted to bring that nuance to the plate with a subtle brioche element — buttery, light, and gently toasty. Dover Sole was the perfect match, as it naturally carries those same buttery qualities. Keeping the presentation clean and refined reflects the Champagne’s elegance, while the flavours remain in harmony from the first sip to the last bite.
